Our Grass-fed Beef Tongue is a whole-animal favorite that becomes tender and richly flavored with patient, gentle cooking. Each package contains 1 whole tongue. Slice it for sandwiches or crisp diced pieces in a skillet for lengua tacos.
How to cook: Thaw in the refrigerator. Put the tongue in a pot with onion, garlic, bay leaf, and enough water to cover. Bring to a boil, reduce to a gentle simmer, and cook for about 3–4 hours, until a knife slides easily into the thickest part. Larger tongues may need longer; tenderness is the guide. USDA recommends at least 160°F for beef organ meats.
Cool just until safe to handle, then peel off the tough outer skin while the tongue is still warm. Trim the firm base if needed, slice or dice, and finish in a hot skillet with a little oil and your favorite taco seasoning.
Kitchen tip: Keep the cooked meat moist with a spoonful of strained cooking liquid. Add lime, salsa, and fresh onion at the table. Explore more slow-cooked cuts in Slow Cookin'.

We suggest you buy at least 5 pounds of meat. The more meat, the better the cold is held in. We ship in insulated liners with dry ice. Your meat should arrive in 2 days of leaving the ranch. We always pack with extra ice just in case there is a delay. Contact from the dry ice may make micro-holes in the packaging. This is normal and the meat is still good to put in your freezer to eat.
