Beef Cheek Meat is a slow-cooking favorite with deep beef flavor and plenty of connective tissue that turns silky during a gentle braise. Each package contains two cheeks, approximately 1.5 lbs total. The reward for a little patience is tender meat for mashed potatoes, stews, tacos, or a bowl of creamy polenta.
How to cook: Thaw in the refrigerator and trim any tough surface membrane. Brown the cheeks, add onion, garlic, herbs, and broth, then cover and braise at 300°F for about 3–4 hours. Cook until a fork slides in easily; cheeks often become tender around 195–205°F, but texture is the best guide. Add liquid if needed.
Kitchen tip: Let the meat rest in its braising liquid, then shred or slice. Chill leftovers promptly and reheat gently with the sauce. Find more braising cuts in Slow Cookin'.

We suggest you buy at least 5 pounds of meat. The more meat, the better the cold is held in. We ship in insulated liners with dry ice. Your meat should arrive in 2 days of leaving the ranch. We always pack with extra ice just in case there is a delay. Contact from the dry ice may make micro-holes in the packaging. This is normal and the meat is still good to put in your freezer to eat.
