Sunday Pot Roast

Pot roast seems very intimidating, but is actually one of the easiest and most forgiving meals you can make.

This meal is so easy to put in an leave for the day! The key to a good roast is TIME & MOISTURE!!

Ingredients:

  • 1 Beck Ranch Roast
  • Salt & Pepper 
  • Diced onions
  • Garlic salt
  • 1 Cup Water
  • Optional: carrots, onions

DIRECTIONS

  • Put roast into crockpot and season one side generously with salt, garlic salt, pepper and diced onions.
  • Turn over roast and season other side.
  • Add water and cook in crockpot (From Frozen: at least 12 hours low. From thawed: at least 6-8 hours on low)
  • If you want pot roasted veggies add carrots, onions and potatoes for the last 2 hours of cooking
  • Enjoy

 We ALWAYS serve this with Lisa's Low Cal Potatoes! I don't like gravy so my potatoes have to taste good without gravy.

Ingredients:

  • 7-8 russet potatoes
  • 1 cube butter (softened)
  • 8oz brick cream cheese
  • Salt & Pepper or REAL SALT Season Salt

DIRECTIONS:

  • Peal, wash & dice potatoes.
  • Cover with water and bring to a boil
  • Let boil until fork tender
  • Drain
  • Add butter, cream cheese and a few shakes of your favorite seasoning
  • Mix with a hand mixer until creamy
  • Serve with gravy or enjoy plain
