Ox Tail is rich in collagen and marrow. This is usually slow cooked or braised for the best texture and flavor. The ox tail can also be added into other bones for nutrient rich bone or beef broth.
I cooked them for at least 4-5 hours. they were still very tough I had to put extra vegetables in my Soup. as they just did not get tender. I also put a package of beef cubes in the soup. The bones did not give up much meat either. Sorry but i do not think i will be using them again. The dogs liked them..lol.
