Honey Lime Chicken Enchilada
Ingredients:
-4 cups Beck Ranch Chicken Breasts, shredded
-2 tbls Chili powder
-½ cup of lime juice
-8, 8 inch tortillas
-4 cups of shredded cheese (your choice!)
-⅔ cup of honey
-1 tsp garlic powder
-28 oz green enchilada sauce
-1 cup heavy cream
Directions: Preheat oven to 350 degrees, and grease a 9x13” pan- set aside. In a large bowl, combine chicken, lime juice, honey, ⅓ cup of enchilada sauce, and seasonings. Marinate for at least two hours. Pour a thin layer of enchilada sauce into the bottom of the prepared pan. Fill each tortilla with chicken mixture and shredded cheese. Place, seam side down, into the pan. Combine leftover marinade, enchilada sauce, and heavy cream. Pour over top of tortillas, and top with shredded cheese. Bake for 25- 30 minutes!
